1/2 a cup of wholemeal / spelt flour
3 tablespoons of date syrup
1/3 of a cup of light coconut milk
1 heaped teaspoon of baking powder
1/2 of a cup of date ‘sugar’
Agave
Combine the wet ingredients in a jug and then dry ingredients in a bowl. Pour the contents of the jug into the bowl and combine. Add a little more coconut milk if you think it’s needed.
In your smallest silicone mold, add teaspoons of the mixture and bake at 180 degrees for about ten minutes (depending how big your molds are!).
While they’re baking, in a saucepan, squirt a little agave and a further tablespoon of date sugar. Allow the sugar to dissolve. Once the cakes are cooked, remove from the oven and brush the tops with the agave/date mixture.
Devour!
