If you’ve ever been tempted to buy vegan ice cream / frozen yogurt, then think again. They are normally loaded with sugar. Who needs a box of anything when this is so quick, easy, cheap, healthy and nutritious.
2 bananas
1 tablespoon of almond butter (or 1/3 of a cup of ground almonds if you’d prefer)
About an hour before, slice the bananas and put them in the freezer. Or, you can always have a bag of frozen bananas in your freezer, but take them out about ten minutes before you’re ready to use them (otherwise you’re food processor will burn out!).
Blitz the bananas and the nuts together (this is noisy!). Even when you think they won’t ‘cream’ together, persist as eventually you have a fantastic ‘ice cream’.
You’ll never return to high cholesterol / sugar puddings again!
