Red Miso Soup

 

Apparently you mustn’t boil your Miso otherwise you lose a lot of the nutritional benefits, so be warned!

1 sachet of red miso paste

4 pak choi (or similar) washed

A handful of shitake mushrooms, roughly chopped

1/2 an onion, sliced

Spring onions to garnish and for crunch

Rice noodles (either brown or vegetable)

1/2 a fresh chili

In the bottom of your bowl place the noodles.  In a saucepan add the paste to hot water and bring, not quite, to the boil.  Add the mushrooms, onion and chili and let the flavors infuse for five minutes or so.  Add the pak choi just before you then pour the soup over the noodles.  Liberally sprinkle spring onions over the top.  Add soy sauce if you’d like.
